Be My Valentine Sugar Cookies

Posted by Laura at 8:03 PM 0 comments
I enlisted the help of some friends on this fun little project. I did all of the baking the night before, so we could just enjoy the decorating part together. The cookies turned out...well, interesting. It seems my friends have a very different idea of what Valentine's day is/means and their cookies reflected that.

I got this Sugar cookie recipe from Food Network, and I loved it when I used it last October for my Halloween cookies. I was initially worried when I took the dough out of the refrigerator, as it was very solid and hard to work with. But, as I worked it a little more, it rolled out perfectly and the cookies turned out fantastic. The only change I made to the recipe, both this time and last time, was to add 2 tsp of vanilla, which gives the cookies just a little more flavor.

3 cups all-purpose flour
3/4 tsp baking powder
1/4 tsp salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 tbsp milk
2 tsp vanilla
powdered sugar, for rolling our dough

1. Stir together flour, baking powder, and salt; set aside. Place butter and sugar in a large bowl and beat until light in color. Add eggs, milk, and vanilla and beat to combine. Put mixer on low speed, gradually adding flour, and beat until mixture pulls away from the side of the bowl. Divide dough in half, wrap in waxed paper, and refrigerate for 2 hours.

2. Preheat oven to 375°F.

3. Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat.

4. Bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

Peanut Butter Cup Blondies

And the peanut butter-chocolate experiment continues...

This week in the form of a bar. A blondie, to be more precise. I put my own twist on a recipe I found over at Smitten Kitchen by not only mixing chopped up Reece's Peanut Butter Cups in the batter, but also pressing whole Peanut Butter Cups into the tops of the bars when they were fresh out of the oven.

Peanut Butter Cup Blondies
(Source: Smitten Kitchen)

8 Tbsp butter, melted
1 Cup Brown Sugar
1 egg
1 tsp vanilla
1/4 tsp salt
1/2 tsp baking powder
1 Cup Flour
1 cup Reece's Peanut Butter Cup Miniatures, chopped
16 Reece's Peanut Butter Cups

1. Grease and 8x8 pan.

2. Beat melted butter and brown sugar until smooth. Beat in egg, and then vanilla.

3. Mix in salt, baking powder, and flour. Gently stir in 1 cup chopped Reece's peanut butter cups.

4. Pour into prepared pan. Bake at 350
°F for 20-25 minutes, or until middle is set.

5. Remove from the oven and press whole peanut butter cups into the top of the bars.

6. Cool on rack before cutting them.

Make 16 bars.

Reese's Pieces Cookies

Posted by Laura at 6:01 PM 0 comments
For my first entry, I thought I would take a simple classic, the chocolate chip cookie, and put a delicious spin on it by substituting the majority of the chocolate chips with Reece's Pieces candies. Because how can that not make for an awesome cookie?

Reese's Pieces Cookies

2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
1 1/2 cups Reece's Pieces
1/2 cup chocolate chips

1. Preheat oven to 375°F.

2. Combine flour, baking soda, and salt in a bowl; set aside. Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in Reece's Pieces and chocolate chips. Drop by rounded tablespoon onto ungreased cookie sheet.

3. Bake for 7 minutes or until the edges turn a golden brown. Cool on baking sheet for 2 minutes; remove to wire racks to cool completely.

Make approximately 3 dozen.
